How does popcorn actually pop?
Only one type of corn pops properly, *Zea mays everta*. Its hull is hard and nearly waterproof, and the kernel holds about 14 to 15% water by weight.
Heat that kernel and the water inside turns to steam with nowhere to go. Pressure builds to roughly 135 psi at around 180°C, the hull splits, and the starch inside blows out into a foam that sets hard as it cools. Kernels that stay at the bottom of the pan usually had too little moisture to build that pressure.
Popcorn is also very old. Archaeologists have found popped corn remains from around 4,700 BCE at sites on the northern coast of Peru. Its move into cinemas came much later, after Charles Cretors built a steam-powered popcorn cart in Chicago in the 1880s.
Is popcorn an Indian snack?
Not traditionally. India has a long line of puffed grains, including murmura or puffed rice, and popped jowar, which appear in chaats, in prasad and in festival sweets. They are cousins of popcorn, not the same thing, and it would be wrong to dress them up as an Indian popcorn tradition.
What is properly Indian is the tax argument. In December 2024 the GST Council spelled out three different rates for popcorn depending on how it was sold, and the country spent a week making jokes about it. The 56th GST Council meeting in September 2025 scrapped the split and put all popcorn at one rate.

Cinema is where most Indians buy popcorn, and the numbers explain why the counter is louder than the box office. PVR Inox earned ₹1,958 crore from food and beverages in FY24 against ₹3,280 crore from tickets, and its spend per head at the counter rose to ₹132 from ₹120 the year before. Tickets are shared with distributors. Popcorn is not.
